Smart Treats Brighten Baskets By VERONICA VOLPE Press Food Editor Easter may bring out various things in adults but for children, it generally brings out the "sweet tooth." Parents, concerned with the kind of quantity of sweets their children consume, can prepare more nourishing varieties at home to use as basket fillers. Oats, other cereals, raisins and chopped nuts in cookies provide a filler with far greater nutrition than the more commonly used confections. Candies can be formed using crumbs, dried fruits, nuts and fruit juices to be rolled in shredded coconut for a more nutritious sweet. These and the popular bunny-shaped cake will make wholesome Easter goodies.

EASTER BUNNY CAKE cups flour cups sugar teaspoons baking powder 1 teaspoon 1 milk cup butter or margarine, softened cup milk cup dairy sour cream -H egg teaspoon pure vanilla extract (see note) Frosting Shredded coconut Green food coloring Raisins Sift flour with sugar, baking powder and salt. Cream butter in large bowl. Add flour mixture and milk. Blend 2 minutes, scraping bowl while beating. A Add sour cream, egg and vanilla extract.

Blend 2 minutes longer. Turn batter into bottom: section of well-greased and lightly floured rabbit baking mold. (The section with the steam vents is to be used for top.) Insert wooden toothpicks lengthwise into the ears and neck for support. Grease and lightly flour top section of mold. Place over batter, fitting into lower section, making sure mold locks.

Tie together with string to keep rising batter from forcin sections apart. Place mold on a baking sheet. Bake in 350-degree oven, for 55 minutes, or until cake tester inserted into the steam vent comes out clean. Cool cake in mold for 15 minutes. Remove top of mold carefully.

Cool cake 5 minutes in bottom of mold. Remove cake from mold to rack. Cool thoroughly on rack with rabbit lying on its side. (Do not sit rabbit upright until completely cool.) Meanwhile prepare frosting. Stand cake upright.

Spread frosting over cake. Sprinkle rabbit with coconut. Use raisins for eyes. Spread frosting over entire tray or serving plate. Carefully stand rabbit on frosting.

Color coconut green and sprinkle around rabbit on tray. Use jelly beans for garnish, if desired. Yield: 1 rabbit cake. Note: For stronger vanilla flavor, 3 teaspoons vanilla may be used. Cake may also be baked in 2 well-greased and lightlyfloured 8-inch cake pans in 350-degree oven, for 25 to 30 minutes.
